tahini dressing
this is my ultimate favourite dressing. it's rich, nutty and lemony - and is great drizzled over all sorts, especially veggies with a bit more substance like kale, broccoli, cauliflower and aubergine.
ingredients:
juice of 1 lemon
50g tahini
salt, pepper
pinch of chilli flakes
1/2 clove garlic (remove the core if you want it less pungent)
1tbsp olive oil
optional: handful herbs e.g. coriander, parsley, mint
add all ingredients into blender and blitz until smooth, taste for seasoning. if it needs thinning out, add a splash of water.
